As one of the most widely cultivated gluten-free seeds, black quinoa packs a protein punch. It is also high in fibre, iron, magnesium and potassium. Black quinoa has an earthier and sweeter taste and many chefs consider it a unique culinary experience. The unique colour comes from the presence of anthocyanins which prevent UV damage and oxidation of the plant.
